Nutty Oatmeal Cookies
1 cup of butter, softened
1 1/2 cup of brown sugar
1 large egg
2 1/4 cups all purpose flour
1 cup of Nash Brother Trading Company Organic old-fashioned oats, uncooked
1/2 teaspoon baking powder
1/4 cup finely chopped pecans
In a medium bowl combine flour, oats and baking powder. Set aside.
In a large mixing bowl, cream together butter and sugar with electric mixer on high speed. Add egg and mix in thoroughly.
Slowly add in flour/oatmeal mixture, 1/2 cup at a time, fully incorporating the dry ingredients before adding more. Once all of flour/oatmeal mixture has been added, divide dough in half. Roll each half into a 12-inch log. On waxed paper, roll logs in the 1/4 cup of finely chopped pecans. Wrap each log in plastic wrap and chill for about 3 hours or until the log is firm enough to slice.
Preheat oven to 350 degrees.
Cut logs into 1/4 inch thick slices. Place each slice 2 inches apart on a baking sheet. Bake 10 to 12 minutes or until edges are golden brown. Cool on a wire rack.
